Ingredients

- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 cup quick cooking oats

- 2 large eggs

- 1/4 cup all-purpose flour (for filling)
- 1 teaspoon baking powder
- Zest of 1 lemon
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the all-purpose flour, quick oats, and salt, mixing until fully combined.
- Press half of this mixture into the bottom of the prepared dish, creating an even layer.
- Whisk together the eggs, lemon juice, granulated sugar for filling, flour for filling, baking powder, and lemon zest.
- Pour the lemon filling over the crust in the baking dish.
- Crumble the remaining oat mixture on top for a delightful topping.
- Bake for 25-30 minutes or until the top turns golden brown.
