Ingredients

  • – 1/2 medium onion (diced) (about 75g)
  • – 1 teaspoon vegetable oil (5g)
  • – 2 eggs
  • – 3/4 cup milk (180ml)
  • – 3/4 cup Italian bread crumbs or seasoned breadcrumbs (90g)
  • – 2 pounds lean ground beef (900g)
  • – 1 tablespoon chili sauce (15ml)
  • – 1 teaspoon (5 ml) Italian seasoning
  • – 2 tablespoons (30 ml) chopped fresh parsley or 2 teaspoons (10 ml) dried parsley
  • – 1 teaspoon (5 ml) kosher salt, more to taste
  • – 1/2 teaspoon (3 ml) black pepper
  • – 1/2 cup chili sauce, see note (120ml)
  • – 1/2 cup chili sauce (120ml)
  • – 2 tablespoons (30 ml) brown sugar, optional


Instructions

  1. Set your oven to 350°F and prepare a baking sheet by covering it with foil and lightly coating it with non-stick spray.
  2. In a small skillet, heat vegetable oil over medium-low heat and sauté the diced onions until they become soft. Allow them to cool fully.
  3. In a medium-sized bowl, whisk together the eggs, milk, and breadcrumbs, and let the mixture sit undisturbed for 5-10 minutes.
  4. Add the lean ground beef, sautéed onions, chili sauce, Italian seasoning, parsley, salt, and pepper to the bowl. Stir until just combined, being careful not to overmix.
  5. Shape the mixture into a loaf measuring 8″x4″ and place it on the prepared baking sheet. Bake for 40 minutes.
  6. While the loaf is baking, mix the chili sauce and brown sugar (if using) to create the topping. Spread this over the loaf and continue baking for another 15-30 minutes, or until the internal temperature reaches 160°F. Optionally, broil for 1-2 minutes for a caramelized finish.
  7. Allow the meatloaf to rest for 10 minutes before cutting it into slices and serving.

  • Allow the egg, milk, and breadcrumb mixture to rest for 5-10 minutes for a moist and tender meatloaf.
