Ingredients

  • – 1/2 medium onion, diced (75g)
  • – 1 teaspoon (5 ml) vegetable oil
  • – 2 eggs
  • – 180ml milk
  • – 180ml seasoned breadcrumbs
  • – 900g lean ground beef
  • – 1 tablespoon (15 ml) chili sauce
  • – 1 teaspoon (5 ml) Italian seasoning
  • – 30ml chopped fresh parsley
  • – 1 teaspoon (5 ml) salt, more to taste
  • – 1/2 teaspoon (3 ml) black pepper
  • – 120ml chili sauce (see note)
  • – 120ml tomato sauce
  • – 30ml brown sugar, optional


Instructions

  1. Heat your oven to 350°F and prepare a baking sheet by covering it with foil and applying a layer of non-stick spray.
  2. Sauté the diced onion in vegetable oil over low heat until soft, then allow it to cool entirely.
  3. In a mixing bowl, whisk together the eggs, milk, and breadcrumbs, and allow the mixture to rest for 5-10 minutes.
  4. Add the lean ground beef, sautéed onions, a tablespoon of chili sauce, Italian seasoning, fresh parsley, salt, and pepper to the bowl. Blend until just incorporated.
  5. Shape the mixture into an 8″x4″ loaf on the lined baking sheet and place it in the oven for 40 minutes.
  6. As the meatloaf bakes, mix the chili sauce with tomato sauce (and brown sugar if using) to create a glaze. Spread this over the meatloaf and continue baking for another 15-30 minutes, or until fully done and the internal temperature reaches 160°F. For an extra touch, broil for 1-2 minutes if desired.
