Ingredients

  • 2 tbsp olive oil (30 ml)
  • 1 small yellow onion, diced
  • 1 lb ground beef (450 g)
  • 3 cloves garlic, minced
  • 3 tbsp (45 ml) chili powder
  • 1 tbsp (15 ml) cumin
  • 2 tsp (10 ml) garlic powder
  • 5 tsp (8 ml) salt
  • 1/2 tsp (3 ml) pepper
  • pinch cayenne powder
  • 1 15 oz can diced tomatoes (425 g)
  • 1 15 oz can tomato sauce (425 g)
  • 1 15 oz can pinto beans (425 g)
  • 1 15 oz can kidney beans (425 g)
  • 3 tbsp (45 ml) tomato paste
  • 2 tbsp (30 ml) honey
  • 2 cups beef broth (480 ml)
  • optional toppings: sour cream, greek yogurt, cheese, green onion, fritos, cilantro..whatever!

Instructions

  1. In a large pot or Dutch oven, warm up the olive oil on medium-high heat.
  2. Once the oil is hot, add the chopped onion and let it cook for 2-3 minutes before adding the ground beef.
  3. Cook for an additional 2-3 minutes, then incorporate the minced garlic.
  4. After the meat has browned, mix in the chili powder, cumin, garlic powder, salt, pepper, and a pinch of cayenne.
  5. Pour in the diced tomatoes, tomato sauce, pinto beans, kidney beans, tomato paste, honey, and beef broth. Stir everything until well blended.
  6. Allow the mixture to reach a gentle boil, then lower the heat to medium-low and let it simmer for 30 minutes, stirring occasionally.
  7. Finish by adding your choice of toppings like sour cream, cheese, green onion, fritos, or cilantro.

Notes

  • Consider using lean ground beef or turkey to reduce the fat content of the chili.
  • Try using fire-roasted diced tomatoes for an extra burst of flavor.
  • For a thicker chili, mash some beans before adding them to the pot.
