Description
Juicy, flavor-packed vegetable skewers grilled to perfection with a balsamic glaze.
Ingredients
- 2 cups bell peppers (mixed colors), chopped into 1–1.5 inch pieces
- 1 cup zucchini, sliced into thick rounds
- 1 cup mushrooms (cremini or button)
- 1 cup red onions, cut into wedges
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon honey or maple syrup
- 1 teaspoon dried Italian herbs (oregano, basil, thyme)
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Soak wooden skewers in water for at least 30 minutes.
- In a bowl, combine balsamic vinegar, olive oil, minced garlic, honey or maple syrup, dried Italian herbs, salt, and black pepper. Stir until well-blended.
- Add bell peppers, zucchini, mushrooms, and red onions to the marinade. Toss to coat evenly and let marinate for 20-30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated vegetables onto the soaked skewers, alternating colors and varieties for visual appeal.
- Place skewers on the grill and cook for about 10-15 minutes, turning occasionally until the veggies are tender and slightly charred.
- Remove from the grill and serve immediately.
Notes
Avoid overcrowding the skewers for even cooking. Experiment with adding other veggies like cherry tomatoes or corn for variety.
