Description

Juicy, flavor-packed vegetable skewers grilled to perfection with a balsamic glaze.


Ingredients

  • 2 cups bell peppers (mixed colors), chopped into 1–1.5 inch pieces
  • 1 cup zucchini, sliced into thick rounds
  • 1 cup mushrooms (cremini or button)
  • 1 cup red onions, cut into wedges
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • 1 teaspoon salt
  • 1 teaspoon black pepper


Instructions

  1. Soak wooden skewers in water for at least 30 minutes.
  2. In a bowl, combine balsamic vinegar, olive oil, minced garlic, honey or maple syrup, dried Italian herbs, salt, and black pepper. Stir until well-blended.
  3. Add bell peppers, zucchini, mushrooms, and red onions to the marinade. Toss to coat evenly and let marinate for 20-30 minutes.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated vegetables onto the soaked skewers, alternating colors and varieties for visual appeal.
  6. Place skewers on the grill and cook for about 10-15 minutes, turning occasionally until the veggies are tender and slightly charred.
  7. Remove from the grill and serve immediately.

Notes

Avoid overcrowding the skewers for even cooking. Experiment with adding other veggies like cherry tomatoes or corn for variety.
