Description

A comforting crockpot dish featuring tender garlic Parmesan chicken served over pasta, perfect for busy weeknights.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 cups chicken broth
  • 1 cup grated Parmesan cheese
  • 1 package (8 oz) cream cheese, cubed and softened
  • 1 tbsp minced garlic
  • 12 oz pasta (penne or rotini)
  • ½ cup heavy cream or half-and-half
  • Optional: chopped parsley or extra Parmesan for garnish


Instructions

  1. Place the chicken breasts into the crockpot and sprinkle with garlic powder, onion powder, salt, and black pepper.
  2. Pour the chicken broth over the chicken, covering it well.
  3. Add grated Parmesan cheese, cubed cream cheese, and minced garlic into the crockpot.
  4. Cover and cook on low for 4-5 hours or on high for 2-3 hours until the chicken is tender.
  5. Once cooked, shred the chicken with two forks and stir into the sauce.
  6. Cook the pasta according to package instructions, then drain.
  7. Add the cooked pasta to the crockpot and mix.
  8. Pour in the heavy cream or half-and-half and stir until creamy.
  9. Serve warm, garnished with extra Parmesan or chopped parsley.

Notes

For a bolder taste, use fresh garlic instead of pre-minced. You may experiment with various cheeses and seasonings.
