- – 1/3 cup tomato ketchup (80 ml)
- – 1/4 cup low sodium chicken broth (60 ml)
- – 1/4 cup balsamic vinegar (60 ml)
- – 1/4 cup liquid honey (60 ml)
- – 2 tablespoons (30 ml) brown sugar
- – 1 tablespoon (15 ml) corn starch
- – 1 teaspoon (5 ml) minced garlic
- – 1/2 teaspoon (3 ml) salt
- – 1/4 teaspoon (1 ml) black pepper
Instructions
- Position the chicken thighs at the bottom of a 2.5-4 quart slow cooker.
- In a separate medium-sized bowl, combine the ketchup, chicken broth, balsamic vinegar, honey, brown sugar, corn starch, minced garlic, salt, and black pepper by whisking them together thoroughly. Pour this mixture over the chicken inside the slow cooker.
- Secure the lid and let it cook on the low setting for 4 hours, or choose the high setting for a 2-hour cooking time.
- Serve with rice, mashed potatoes, noodles, or any preferred side dish!
Notes
- Marinate chicken thighs in sauce for at least 30 minutes before cooking for enhanced flavor.
- Thicken sauce by mixing extra cornstarch with water during the last 30 minutes of cooking.
- Personalize flavor by trying different vinegars like apple cider or red wine; top with fresh herbs before serving.
