Ingredients
- 2 tbsp (30 ml) olive oil
- 1 small yellow onion, diced
- 1 lb (450 g) ground beef
- 3 cloves garlic, minced
- 3 tbsp (45 g) chili powder
- 1 tbsp (15 g) cumin
- 2 tsp (4 g) garlic powder
- 5 tsp (7.5 g) salt
- 1/2 tsp (2.5 g) pepper
- pinch of cayenne powder
- 1 15 oz can (425 g) diced tomatoes
- 1 15 oz can (425 g) tomato sauce
- 1 15 oz can (425 g) pinto beans
- 1 15 oz can (425 g) kidney beans
- 3 tbsp (45 g) tomato paste
- 2 tbsp (30 ml) honey
- 2 cups (480 ml) beef broth
- optional toppings: sour cream, greek yogurt, cheese, green onion, fritos, cilantro..whatever!
Instructions
- In a large pot or Dutch oven, warm up the olive oil on medium-high heat. Once the oil is hot, toss in the diced onion. Let it sauté for 2-3 minutes, then add the ground beef. Cook for an additional 2-3 minutes before incorporating the minced garlic.
- Once the meat is browned, sprinkle in the chili powder, cumin, garlic powder, salt, pepper, and cayenne powder. Mix everything together thoroughly.
- Introduce the diced tomatoes, tomato sauce, pinto beans, kidney beans, tomato paste, honey, and beef broth to the pot. Stir until everything is well blended.
- Allow the mixture to come to a gentle boil, then lower the heat to medium-low. Let it simmer for 30 minutes, stirring occasionally.
- Finish by adding your choice of toppings, such as sour cream, cheese, green onion, fritos, or cilantro. Enjoy!
Notes
- Consider using a blend of ground beef and ground for a more flavorful chili.
- Try swapping some chili powder for smoked paprika or chipotle powder for a smoky twist.
- For a thicker consistency, mash some of the beans before adding them to the chili.
