Delicious and healthy banana bread muffins packed with protein and flavor, perfect for busy mornings or a wholesome snack.
Ingredients
- 2 ripe bananas
- 1 cup oat flour
- 1/2 cup protein powder
- 1/4 cup honey or maple syrup
- 1/2 cup Greek yogurt
- 1/4 cup almond milk
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 cup chopped walnuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mash the ripe bananas in a mixing bowl until smooth.
- Add the oat flour, protein powder, honey or maple syrup, Greek yogurt, almond milk, baking soda, salt, vanilla extract, and cinnamon to the bowl.
- Mix all the ingredients together until just combined. If desired, fold in the chopped walnuts or chocolate chips.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool for a few minutes in the pan before transferring them to a wire rack.
Notes
Use overly ripe bananas for the best flavor. Check your muffins at the minimum baking time, as ovens can vary.
