Description

Delicious and healthy banana bread muffins packed with protein and flavor, perfect for busy mornings or a wholesome snack.


Ingredients

  • 2 ripe bananas
  • 1 cup oat flour
  • 1/2 cup protein powder
  • 1/4 cup honey or maple syrup
  • 1/2 cup Greek yogurt
  • 1/4 cup almond milk
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 cup chopped walnuts or chocolate chips (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Add the oat flour, protein powder, honey or maple syrup, Greek yogurt, almond milk, baking soda, salt, vanilla extract, and cinnamon to the bowl.
  4. Mix all the ingredients together until just combined. If desired, fold in the chopped walnuts or chocolate chips.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool for a few minutes in the pan before transferring them to a wire rack.

Notes

Use overly ripe bananas for the best flavor. Check your muffins at the minimum baking time, as ovens can vary.
