A delightful apple pie recipe that combines sweet and tart apples with warm spices, perfect for family gatherings.
Ingredients
- 1 homemade double pie crust (2 sheets of pie dough)
- 1/4 teaspoon lemon zest
- Juice from half a lemon (2 tablespoons)
- 5 pounds apples (about 11 large)
- 3/4 cup packed brown sugar
- 3/4 cup granulated sugar
- 5 tablespoons all-purpose flour
- 1/4 teaspoon kosher salt
- 1 1/2 teaspoons cinnamon
- 3/4 teaspoon nutmeg
- 1/2 teaspoon cardamom (optional)
- 1 teaspoon vanilla
- 1 tablespoon milk (for brushing on pie)
- 1 tablespoon beaten egg (optional, for brushing on pie)
- 1 tablespoon raw sugar (for topping pie)
Instructions
- Prepare apple filling in a 12-inch skillet. Zest the lemon peel and add lemon juice. Peel and slice apples, adding them to the skillet and coating with lemon juice.
- Set skillet over medium heat, mix in brown sugar, granulated sugar, flour, salt, cinnamon, nutmeg, and cardamom. Cover skillet and cook for 20 minutes, stirring every three minutes.
- Once apples are fork-tender, remove from heat and stir in vanilla. Transfer apple mixture to a half sheet pan to cool for about 30 minutes.
- Roll out pie dough and place the first sheet in a deep 9-inch pie dish. Fill with cooled apple mixture, cover with second pie crust, and crimp edges.
- Chill assembled pie for 20-30 minutes. Preheat oven to 425°F, brush crust with milk or egg wash, and sprinkle with raw sugar.
- Bake on a baking sheet for 15 minutes, reduce oven temperature to 350°F and bake for an additional 40-45 minutes until golden brown center and bubbling filling.
- Let the pie cool for 4 hours before serving.

Use a variety of apples for depth of flavor and consider serving with whipped cream or vanilla ice cream.
