Ingredients
- 1 pound (454 g) ground beef (450 grams)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon (5 ml) salt (5 grams)
- 1/2 teaspoon (3 ml) black pepper (2.5 grams)
- 1 teaspoon (5 ml) ground cumin (2 grams)
- 1 teaspoon (5 ml) paprika (2 grams)
- 1/2 teaspoon (3 ml) chili powder (1 gram)
- 8 ounce (227 g) s shredded cheddar cheese (225 grams)
- 8 flour tortillas (8-inch diameter)
- 1 tablespoon (15 ml) vegetable oil (15 milliliters)
- 1 can diced tomatoes (14.5 ounce (411 g) s or 411 grams)
- 1/4 cup (60 ml) chopped fresh cilantro (15 grams)
- 1 cup (240 ml) sour cream (240 milliliters)
Instructions
- Preheat oven to 375°F (190°C).
- Heat vegetable oil in a large skillet over medium heat.
- Add diced onion to the skillet and sauté until translucent.
- Stir in minced garlic and cook for 1 minute.
- Add ground beef to the skillet and cook until browned.
- Drain excess fat from the skillet.
- Stir in salt, black pepper, cumin, paprika, and chili powder.
- Add the can of diced tomatoes to the beef mixture.
- Simmer the mixture for 5 minutes, stirring occasionally.
- Remove skillet from heat and let it cool slightly.
- Stir in shredded cheddar cheese until well combined.
- Lay a flour tortilla on a flat surface.
- Spoon a portion of the beef mixture onto the center of the tortilla.
- Roll the tortilla tightly around the filling.
- Place the roll-up seam side down in a baking dish.
- Repeat with remaining tortillas and beef mixture.
- Cover the roll-ups with foil.
- Bake in the preheated oven for 15 minutes.
- Remove foil and bake for an additional 5 minutes.
- Garnish roll-ups with chopped fresh cilantro.
- Serve with sour cream on the side.
