Description

Crispy and flavorful Beef Taquitos filled with a savory beef mixture and served with fresh toppings.


Ingredients

  • 1 pound ground beef or shredded cooked beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/2 cup tomato sauce or salsa
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)
  • 12 small corn tortillas
  • Vegetable oil for frying or cooking spray for baking
  • Toothpicks (optional, for holding taquitos together during cooking)
  • Guacamole, sour cream, salsa, shredded lettuce, chopped cilantro, diced tomatoes for garnish


Instructions

  1. Heat a large skillet over medium heat and add vegetable oil.
  2. Add diced onion and cook for 3-4 minutes until softened.
  3. Add minced garlic and sauté for an additional 30 seconds.
  4. Stir in ground beef or warm shredded beef, cooking until browned.
  5. Mix in chili powder, cumin, smoked paprika, oregano, salt, and pepper, cooking for 1-2 minutes.
  6. Add tomato sauce or salsa and let cook for 3-5 minutes.
  7. Remove from heat and stir in shredded cheese.
  8. Warm tortillas in a skillet or microwave.
  9. Place 2 tablespoons of beef filling along the bottom third of each tortilla and roll tightly, securing with a toothpick if desired.
  10. For frying, heat vegetable oil and fry taquitos until golden brown, about 2-3 minutes per side.
  11. For baking, preheat oven to 425°F, arrange taquitos on a baking sheet, spray with oil, and bake for 15-20 minutes.
  12. For air frying, preheat to 400°F and air fry for 6-8 minutes.
  13. Garnish with toppings before serving.

Notes

Double the recipe and freeze extras for quick meals later. Adjust spices for desired heat.
