Crispy and flavorful Beef Taquitos filled with a savory beef mixture and served with fresh toppings.
Ingredients
- 1 pound ground beef or shredded cooked beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/2 cup tomato sauce or salsa
- 1/2 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)
- 12 small corn tortillas
- Vegetable oil for frying or cooking spray for baking
- Toothpicks (optional, for holding taquitos together during cooking)
- Guacamole, sour cream, salsa, shredded lettuce, chopped cilantro, diced tomatoes for garnish
Instructions
- Heat a large skillet over medium heat and add vegetable oil.
- Add diced onion and cook for 3-4 minutes until softened.
- Add minced garlic and sauté for an additional 30 seconds.
- Stir in ground beef or warm shredded beef, cooking until browned.
- Mix in chili powder, cumin, smoked paprika, oregano, salt, and pepper, cooking for 1-2 minutes.
- Add tomato sauce or salsa and let cook for 3-5 minutes.
- Remove from heat and stir in shredded cheese.
- Warm tortillas in a skillet or microwave.
- Place 2 tablespoons of beef filling along the bottom third of each tortilla and roll tightly, securing with a toothpick if desired.
- For frying, heat vegetable oil and fry taquitos until golden brown, about 2-3 minutes per side.
- For baking, preheat oven to 425°F, arrange taquitos on a baking sheet, spray with oil, and bake for 15-20 minutes.
- For air frying, preheat to 400°F and air fry for 6-8 minutes.
- Garnish with toppings before serving.
Notes
Double the recipe and freeze extras for quick meals later. Adjust spices for desired heat.
