Description
A comforting beef enchilada casserole with layers of tortillas, ground beef, and gooey cheese, perfect for busy weeknights or family gatherings.
Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cups red enchilada sauce
- 8 corn tortillas, cut into strips
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 can black beans, drained and rinsed (optional)
- 1 cup corn (optional)
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet over medium heat, brown the ground beef and onion until the beef is cooked through. Drain excess fat.
- Stir in the enchilada sauce, along with black beans and corn if you’re using them.
- In a 9×13 inch baking dish, layer half of the tortilla strips, half of the beef mixture, and half of the cheese. Repeat the layers, finishing with cheese on top.
- Cover with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Let cool for a few minutes before serving.
Notes
Let the casserole rest for about 10 minutes after removing from the oven for better serving structure.
