Description

A comforting beef enchilada casserole with layers of tortillas, ground beef, and gooey cheese, perfect for busy weeknights or family gatherings.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cups red enchilada sauce
  • 8 corn tortillas, cut into strips
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 can black beans, drained and rinsed (optional)
  • 1 cup corn (optional)
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef and onion until the beef is cooked through. Drain excess fat.
  3. Stir in the enchilada sauce, along with black beans and corn if you’re using them.
  4. In a 9×13 inch baking dish, layer half of the tortilla strips, half of the beef mixture, and half of the cheese. Repeat the layers, finishing with cheese on top.
  5. Cover with aluminum foil and bake for 20 minutes.
  6. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  7. Let cool for a few minutes before serving.

Notes

Let the casserole rest for about 10 minutes after removing from the oven for better serving structure.
