Description

Homemade beef and cheese empanadas with a crispy crust filled with savory ground beef and melted cheddar cheese.


Ingredients

  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon chili powder
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1 package (14 oz) refrigerated pie crusts
  • 1 egg, beaten (for egg wash)


Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Add olive oil to a large skillet over medium heat, then add the onion and sauté for about 3-4 minutes until softened.
  3. Stir in the garlic and cook for another minute.
  4. Add ground beef to the skillet and cook until browned. Season with cumin, paprika, chili powder, salt, and pepper.
  5. Remove the skillet from heat and stir in cheddar cheese until melted.
  6. Roll out pie crusts on a floured surface and cut into 4-inch circles.
  7. Place a spoonful of the beef mixture in the center of each circle, fold over, and seal with a fork.
  8. Brush the tops with the beaten egg.
  9. Bake for 20-25 minutes until golden brown.
  10. Cool slightly before serving. Enjoy warm!

Notes

Serve with guacamole, salsa, or ranch dressing for a flavor burst.
