  • 1/2 teaspoon (2.5 ml) garlic powder
  • 1/2 teaspoon (2.5 ml) seasoning salt
  • 1/2 teaspoon (2.5 ml) salt
  • 1/4 teaspoon (1.25 ml) pepper
  • 1/4 teaspoon (1.25 ml) hot sauce
  • 2 cups (226 g) shredded cheddar cheese
  • 1 4 oz can (113 g) whole green chiles
  • 6 eggs
  • 2 cups (480 ml) of milk
  • 1/3 cup (40 g) flour

Instructions

  1. Set your oven to a temperature of 350°F (175°C) to preheat.
  2. In a frying pan, cook the lean ground beef and chopped onion until browned, then remove any excess fat.
  3. Incorporate the garlic powder, seasoning salt, salt, pepper, and hot sauce into the cooked meat, then set it aside.
  4. Cut the whole green chiles into squares approximately 1 ½ inches in size.
  5. Place the chile pieces evenly across the bottom of a 9×13 inch baking dish.
  6. Sprinkle half of the shredded cheddar cheese over the chiles, followed by the entire amount of seasoned ground beef.
  7. Add another layer of chile squares, then cover with the remaining cheddar cheese.
  8. In a separate bowl, whisk together the eggs, milk, and flour until the mixture is smooth.
  9. Evenly pour the egg mixture over the contents of the baking dish, then sprinkle with the remaining cheese.
  10. Bake in the preheated oven for 45 to 60 minutes, until the edges of the dish are golden brown.
  11. If desired, serve the dish with salsa and sour cream on the side.

Notes

  • Consider increasing the amount of hot sauce or using spicier chiles for a more intense flavor.
  • Swap the ground beef for crumbled tofu or tempeh to create a vegetarian-friendly version of this dish.
  • Experiment with different cheeses like pepper jack or Mexican cheese blend for unique flavor variations.
