Ingredients

  • 12-16 ounce (397 g) s beef bacon (reserve the bacon grease after cooking)
  • 2 pounds (907 g) ground beef my preference is 80/20
  • 2/3 cup (160 ml) quick cook oats
  • 1/2 cup (120 ml) milk
  • 1 egg lightly beaten
  • 1 tablespoon (15 ml) Worcestershire sauce
  • 1 teaspoon (5 ml) garlic powder
  • 1 teaspoon (5 ml) onion powder
  • 1/2 teaspoon (3 ml) kosher salt
  • 1/2 cup (120 ml) sweet and spicy barbecue sauce plus more for serving
  • 1 tablespoon (15 ml) reserved beef bacon grease


Instructions

  1. Heat your oven to 400°F and cover a large baking tray with foil. Lay out the bacon strips evenly on the tray and slide it into the oven. Set a timer for 18 minutes, and when it goes off, check the bacon.
  2. Continue cooking for 2-4 minutes more, keeping a close eye on it to prevent burning. Take the bacon out of the oven and use tongs to move it to a plate lined with paper towels to absorb excess grease. Save 1 tablespoon of the bacon grease for later. Once the bacon is cool enough, chop it into tiny ¼-inch pieces.
  3. Lower the oven setting to 350°F. In a mixing bowl, combine the ground beef, chopped bacon, oats, milk, beaten egg, Worcestershire sauce, garlic powder, onion powder, and salt. Use your hands or a wooden spoon to blend everything together.
  4. Form the mixture into a loaf shape on a foil-covered baking tray. In a separate small bowl, mix the barbecue sauce with the reserved tablespoon of bacon grease. Spread the sauce over the top of the meatloaf and use a brush to cover it evenly. Bake for 65-70 minutes until the inside temperature hits 165 degrees.
  5. Let the meatloaf sit for at least 5 minutes before cutting it. Offer extra barbecue sauce for serving, if liked.

Notes

  • Use 80/20 ground beef for a more tender meatloaf.
  • Enhance flavor with Worcestershire sauce.
  • Allow meatloaf to rest before slicing for optimal juiciness.
