Description

Delicious barbecue meatballs served over a bed of roasted sweet potatoes and broccoli, drizzled with a creamy avocado goddess sauce.


Ingredients

  • 1 lb ground sirloin or lean ground beef
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • ½ tsp sea salt
  • Freshly ground black pepper, to taste
  • 1 large egg
  • ⅓ cup panko breadcrumbs
  • 1 tbsp dried basil
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 large garlic clove, minced
  • ⅔ cup barbecue sauce
  • 1 tbsp balsamic vinegar
  • 1 tbsp tamari
  • 3 tbsp water
  • 4 medium sweet potatoes, peeled and diced into 1-inch cubes
  • 1 bunch of broccoli, cut into medium florets
  • 4 tbsp extra-virgin olive oil, divided
  • Sea salt and pepper, to taste
  • 1 ripe avocado
  • ½ cup Greek yogurt
  • Juice of 1 lime
  • 1 garlic clove, minced
  • ½ tsp sea salt
  • Big handful of fresh herbs (basil and dill recommended)


Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. In a bowl, combine ground sirloin, panko breadcrumbs, minced garlic, and any additional seasoning. Mix gently to maintain a tender texture.
  3. Shape the mixture into 1-inch balls and place them on the prepared baking sheet.
  4. Bake for 20 minutes in the preheated oven until golden brown and cooked through.
  5. In a large bowl, combine diced sweet potatoes and broccoli. Drizzle with 2 tablespoons of olive oil and season with salt and pepper. Toss to coat evenly.
  6. Roast the sweet potatoes and broccoli in the oven for 30 minutes or until tender.
  7. Meanwhile, blend avocado, Greek yogurt, lime juice, minced garlic, sea salt, and fresh herbs until smooth to create the avocado goddess sauce.
  8. Warm the barbecue sauce in a skillet over medium heat. Once hot, toss the baked meatballs in the sauce until fully coated.
  9. Serve the meatballs over a base of cooked rice, quinoa, or greens, topped with the roasted sweet potatoes and broccoli, and drizzle with the avocado goddess sauce before enjoying.

Notes

Consider customizing your spices for additional flavor. Be cautious with salt as barbecue sauce is often salty.
