Description

Comforting and nourishing Banana Oatmeal Muffins, perfect for breakfast or a snack.


Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup milk (or non-dairy alternative)
  • 1/4 cup maple syrup (optional)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or blueberries (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mash the ripe bananas.
  3. Add the rolled oats, milk, maple syrup, baking powder, baking soda, cinnamon, and salt to the bowl and mix until combined.
  4. If using, fold in the chocolate chips or blueberries.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool in the pan for a few minutes before transferring to a wire rack.

Notes

For added flavor, try toasting the oats lightly before mixing. Use an oven thermometer to ensure the correct baking temperature.
