Description

A comforting classic banana bread recipe that transforms overripe bananas into a delicious treat.


Ingredients

  • 2 overripe bananas
  • ½ cup canola oil
  • ½ cup milk
  • ½ cup caster sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups plain flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt


Instructions

  1. Preheat the oven to 160°C or 180°C.
  2. Prepare your loaf tin by greasing it and lining with baking paper.
  3. Mash the bananas in a large mixing bowl until smooth.
  4. Add the canola oil, milk, both sugars, eggs, and vanilla extract to the bowl.
  5. Stir until the mixture is well combined.
  6. Sift the flour, baking powder, and salt over the banana mixture and gently fold until just combined.
  7. Pour the batter into the prepared tin.
  8. Bake for 45-55 minutes or until the bread is golden and a skewer inserted in the center comes out clean.
  9. Allow to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.

Notes

For added flavor, consider mixing in nuts or chocolate chips. Letting the bread rest in the tin for a few minutes can help retain moisture.
