A comforting classic banana bread recipe that transforms overripe bananas into a delicious treat.
Ingredients
- 2 overripe bananas
- ½ cup canola oil
- ½ cup milk
- ½ cup caster sugar
- ½ cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups plain flour
- 2 teaspoons baking powder
- ½ teaspoon salt
Instructions
- Preheat the oven to 160°C or 180°C.
- Prepare your loaf tin by greasing it and lining with baking paper.
- Mash the bananas in a large mixing bowl until smooth.
- Add the canola oil, milk, both sugars, eggs, and vanilla extract to the bowl.
- Stir until the mixture is well combined.
- Sift the flour, baking powder, and salt over the banana mixture and gently fold until just combined.
- Pour the batter into the prepared tin.
- Bake for 45-55 minutes or until the bread is golden and a skewer inserted in the center comes out clean.
- Allow to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
Notes
For added flavor, consider mixing in nuts or chocolate chips. Letting the bread rest in the tin for a few minutes can help retain moisture.
