Delicious and comforting banana bread muffins made with ripe bananas and simple ingredients, perfect for breakfast or a snack.
Ingredients
- 2 very ripe bananas (mashed well with a fork)
- 1/3 cup melted butter (slightly cooled)
- 1/2 cup sugar
- 1 large egg (beaten)
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 pinch of salt
- 1 1/2 cups all-purpose flour (spooned and leveled)
- Optional mix-ins: chocolate chips, chopped walnuts, or a sprinkle of cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners.
- Stir the mashed ripe bananas with slightly cooled melted butter in a large mixing bowl.
- Add the sugar, beaten egg, and vanilla extract to the banana-butter mixture, mixing until just combined.
- Sprinkle the baking soda and salt over the mixture and fold in the flour until no streaks remain.
- Gently fold in any optional mix-ins you desire.
- Scoop the completed batter into the lined muffin cups, filling them about three-quarters full.
- Bake for 20–25 minutes, until the tops turn golden brown and a toothpick inserted in the center comes out clean.
- Cool the muffins in the pan for about five minutes before transferring to a wire rack.
