Ingredients
- 6 large poblano peppers (720g)
- 5 pounds ground beef (680g)
- 1 tablespoon chili powder (6g)
- 2 cloves garlic, minced
- 1 teaspoon ground cumin (2g)
- 1 teaspoon dried oregano (1g)
- 1/4 teaspoon ground cayenne pepper (0.5g)
- 1/4 teaspoon ground paprika (0.5g)
- 1/4 teaspoon ground dried chipotle pepper (0.5g)
- salt and ground black pepper to taste
- 1 large onion, chopped
- 2 cans diced tomatoes with green chile peppers (2 x 411g)

- 3 cups shredded Mexican cheese blend (300g)
Instructions
- Position the oven rack approximately 6 inches below the broiler and preheat the broiler function. Cover a baking tray with aluminum foil. Arrange the halved poblano peppers with the cut sides facing down on the lined tray.
- Broil the peppers until their skins are charred and blistered, which should take roughly 5 to 8 minutes. Transfer the charred peppers to a bowl and cover them tightly with plastic wrap, letting them steam and cool for about 10 minutes.
- Warm a large pan over medium-high heat. Add the beef, along with the chili powder, garlic, cumin, oregano, cayenne, paprika, chipotle, salt, and black pepper. Stir and cook until the beef is no longer pink, approximately 4 minutes. Add the chopped onion and cook until it begins to soften, about 2 minutes. Incorporate the diced tomatoes with green chiles, and continue cooking until the onions turn translucent, another 5 minutes. Allow the beef mixture to cool.
- Set the oven to 350 degrees F (175 degrees C) and spray a casserole dish with cooking spray.
- Rinse the cooled poblano peppers under water to peel off the skins, then pat them dry with paper towels. Layer some of the peppers on the bottom of the prepared dish, followed by one-third of the beef mixture. Sprinkle with 1 cup of shredded Mexican cheese blend. Repeat these layers twice more in the same sequence.
- Place the dish in the oven, uncovered, and bake until the top is golden brown, about 35 minutes.
