  • 1 teaspoon (5 ml) garlic powder (5 grams)
  • 1 teaspoon (5 ml) onion powder (5 grams)
  • 1 teaspoon (5 ml) smoked paprika (5 grams)
  • 1 teaspoon (5 ml) black pepper (5 grams)
  • 1 teaspoon (5 ml) salt (5 grams)
  • 2 tablespoons (30 ml) soy sauce (30 milliliters)
  • 2 tablespoons (30 ml) maple syrup (30 milliliters)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix garlic powder, onion powder, smoked paprika, black pepper, and salt.
  3. Rub the spice mixture evenly over the venison tenderloin.
  4. Heat olive oil in a skillet over medium-high heat.
  5. Sear the venison tenderloin in the skillet for 2-3 minutes on each side until browned.
  6. Remove the tenderloin from the skillet and let it cool slightly.
  7. Wrap the tenderloin with turkey bacon slices, slightly overlapping each piece.
  8. Secure the bacon with toothpicks if necessary.
  9. In another small bowl, combine soy sauce and maple syrup.
  10. Brush the soy sauce and maple syrup mixture over the bacon-wrapped tenderloin.
  11. Place the tenderloin on a baking sheet lined with parchment paper.
  12. Bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
  13. Let the tenderloin rest for 5-10 minutes before slicing.
