Ingredients

  • – 1 package beef bacon (116 oz / 3.3 kg)
  • – 1/2 cup (270g) tomato sauce
  • – 1 tablespoon (14g) Dijon mustard
  • – 2 tablespoons (25g) brown sugar
  • – 1 medium onion, diced
  • – 1/2 cup (110g) green bell pepper, finely chopped
  • – 2 teaspoons (4g) fresh thyme (1/2 teaspoon dried thyme)
  • – 2 teaspoons (10g) minced garlic
  • – 1 1/2 pounds (680g) ground beef
  • – 3/4 cup (90g) breadcrumbs
  • – 1 large egg
  • – 2 tablespoons (34g) tomato sauce
  • – 1-1 1/2 teaspoons (6-9g) salt
  • – 1 teaspoon (2g) black pepper
  • – 1 tablespoon (15ml) Worcestershire sauce
  • – 1/2 tablespoon (5g) beef bouillon powder or 1 cube (optional)


Instructions

  1. Heat the oven to 350°F (177°C) with the oven rack positioned in the center.
  2. Prepare a baking tray with parchment paper, then lay out the bacon strips so they overlap slightly. Put aside for later.
  3. In a small bowl, mix together the tomato sauce, Dijon mustard, and brown sugar, then set this mixture aside.
  4. Warm up a tablespoon of oil in a medium-sized pan over medium heat.
  5. Add the diced onion, minced garlic, thyme, and chopped green bell pepper, and sauté them for a couple of minutes to enhance their flavors. Ensure they don’t burn, then allow the mixture to cool down.
  6. In a medium bowl, combine the ground beef, breadcrumbs, egg, black pepper, Worcestershire sauce, and beef bouillon powder (if using). Add the cooled vegetable mixture, and gently blend everything until well incorporated, being cautious not to mix too much.
  7. Shape the mixture into a log on top of the bacon. Spread about two-thirds of the tomato sauce mixture over the top.
  8. Starting from the shorter side of the tray, use the parchment paper to help roll the meatloaf so that the bacon wraps around it. Coat it with the remaining tomato sauce mixture.
  9. Cook in the oven for 45 to 60 minutes, or until a thermometer inserted into the center of the meatloaf reads 160°F (72°C). Let it sit for 10 minutes before cutting.
  10. Pair with mashed potatoes or your favorite side dish. Enjoy your meal!
