Ingredients

  • 12 ounce (340 g) s chopped beef bacon
  • 1 small white onion, chopped
  • 5 button mushrooms, chopped
  • 5 pounds (680 g) extra-lean ground beef
  • 25 cup (60 ml) evaporated milk
  • 1 egg
  • 6 ounce (170 g) s shredded Swiss cheese, divided
  • 5 cup (120 ml) corn flake crumbs


Instructions

  1. Set your oven to 350 degrees F (175 degrees C) to preheat.
  2. In a pan over medium heat, fry the chopped bacon until crispy, then remove with a slotted spoon and place on a paper towel-lined plate, reserving 1 tablespoon of bacon. Leave only 1 tablespoon of the bacon fat in the pan.
  3. Sauté the chopped onion and mushrooms in the same pan until they soften.
  4. In a large bowl, mix the ground beef with the evaporated milk and the egg. Add the cooked onion and mushrooms, followed by approximately 4 ounces of the Swiss cheese and all but 1 tablespoon of the bacon, stirring everything together. Incorporate the corn flake crumbs until the mixture is fully combined. Mold the mixture into a loaf shape and place it in a meatloaf pan.
  5. Place the pan in the oven and bake for 60 minutes. Remove any excess fat, then sprinkle the remaining 2 ounces of Swiss cheese and the reserved tablespoon of bacon on top. Return to the oven and bake until the cheese is completely melted, which should take around 5 additional minutes.

Notes

  • Make sure to cook the chopped bacon until it’s crispy for added texture in the meatloaf.
  • Opt for extra-lean ground beef to lower the fat content of the dish.
  • Evenly mix in the corn flake crumbs to help bind the meatloaf together.
