Ingredients
- 6 large slices of Sourdough Bread (or bread of choice)
- 5 oz (99 g) / 100 g Dried Macaroni
- 1 cup (240 ml) / 100 g Cheese (see notes)
- 1 cup (240 ml) / 250 ml Milk, at room temp
- 4-6 single rashers of Beef Bacon, diced
- 1 tbsp (15 ml) Butter, plus more to spread
- 1 tbsp (15 ml) Flour
- 1 tsp (5 ml) Hot Sauce, or to taste
- 1/4 tsp (1 ml) Garlic Powder
- Salt & Pepper, to taste
Instructions
- Place your macaroni into a pot of salted boiling water and cook until it’s firm but tender. Drain when ready.
- In a large skillet, start cooking your bacon pieces over medium heat. Once they are crispy, add 1 tablespoon of butter (remove any excess bacon grease if needed; a small amount will enhance the flavor, but too much will make the sauce greasy). Mix in 1 tablespoon of flour to create a paste, then slowly pour in 1 cup of milk, whisking continuously to prevent lumps.
- After the sauce has thickened, incorporate the hot sauce, garlic powder, and season with salt and pepper to your liking. Reduce the heat to very low and mix in your cooked pasta.
- You can either transfer the pasta to a separate bowl and clean the pan for the grilled cheese, or leave the pasta in the pan and use another pan.
- Apply butter to one side of each bread slice and place them butter-side-down on a cutting board. Add the macaroni and cheese mixture, cover with another slice of bread, then butter the top.
- Place the sandwiches in a frying pan and cook each side over medium heat until the exterior is golden and crispy, and the inside is melted and gooey.
Notes
- Experiment with different types of cheese like sharp cheddar or Gruyere for a unique flavor.
- Add more hot sauce or diced jalapenos for a spicy kick to the mac ‘n’ cheese.
- Sprinkle extra cheese on top of the macaroni for extra decadence before adding the bread.
