Ingredients
- 4 boneless, skinless chicken breasts
- 8 ounces (227 g) cream cheese (225 grams)
- 1 cup (240 ml) shredded beef cheese (115 grams)
- 4 jalapeno peppers, seeded and finely chopped
- 1 teaspoon (5 ml) garlic powder (5 grams)
- 1 teaspoon (5 ml) onion powder (5 grams)
- Salt to taste
- Black pepper to taste
- 2 tablespoons (30 ml) vegetable oil (30 milliliters)
- 1 cup (240 ml) breadcrumbs (120 grams)
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine cream cheese, cheddar cheese, chopped jalapenos, garlic powder, onion powder, salt, and black pepper.
- Mix the ingredients until well combined and smooth.
- Lay the chicken breasts flat on a cutting board and carefully slice a pocket into each one.
- Stuff each chicken breast pocket with an equal amount of the cream cheese mixture.
- Secure the edges of the chicken breasts with toothpicks to seal in the stuffing.
- Season the outside of the chicken breasts with salt and black pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Place the stuffed chicken breasts in the skillet and sear for about 3 minutes on each side until golden brown.
- Remove the skillet from heat and coat the tops of the chicken breasts with breadcrumbs.
- Transfer the skillet to the preheated oven.
- Bake for 20-25 minutes or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Let the chicken rest for a few minutes before serving.
- Remove toothpicks and serve warm.
