  • 1 cup (240 ml) shredded beef cheese (115 grams)
  • 4 jalapeno peppers, seeded and finely chopped
  • 1 teaspoon (5 ml) garlic powder (5 grams)
  • 1 teaspoon (5 ml) onion powder (5 grams)
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons (30 ml) vegetable oil (30 milliliters)
  • 1 cup (240 ml) breadcrumbs (120 grams)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine cream cheese, cheddar cheese, chopped jalapenos, garlic powder, onion powder, salt, and black pepper.
  3. Mix the ingredients until well combined and smooth.
  4. Lay the chicken breasts flat on a cutting board and carefully slice a pocket into each one.
  5. Stuff each chicken breast pocket with an equal amount of the cream cheese mixture.
  6. Secure the edges of the chicken breasts with toothpicks to seal in the stuffing.
  7. Season the outside of the chicken breasts with salt and black pepper.
  8. Heat olive oil in a large oven-safe skillet over medium-high heat.
  9. Place the stuffed chicken breasts in the skillet and sear for about 3 minutes on each side until golden brown.
  10. Remove the skillet from heat and coat the tops of the chicken breasts with breadcrumbs.
  11. Transfer the skillet to the preheated oven.
  12. Bake for 20-25 minutes or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  13. Let the chicken rest for a few minutes before serving.
  14. Remove toothpicks and serve warm.

Notes

  • For a lighter option, opt for low-fat cream cheese and reduced-fat cheddar.
  • Try switching up the cheeses with pepper jack or mozzarella for a unique twist.
  • Add a splash of fresh lemon juice to the cream cheese mix for a burst of flavor.
