Ingredients
- 2lbs (907 g) Ground Beef
- 2lbs (907 g) Turkey Bacon for weave
- 5 tbsp (23 ml) Kosher Salt
- 5 tbsp (23 ml) Black Pepper
- 5 tbsp (23 ml) Garlic Powder
- 2 Jalapeños diced
- 2 blocks Cream Cheese
- 1/2 cup (120 ml) Shredded Cheese
- 4-6 Cheese Slices
- 5 cup (360 ml) s Mayonnaise
- 5 cup (360 ml) s BBQ Sauce
- Burger Buns
Instructions
- Begin by removing the seeds and chopping your jalapeños finely. In a mixing bowl, combine the cream cheese, chopped jalapeños, and shredded cheese, stirring until well mixed.
- To create a bacon weave, spread out a sheet of wax paper. Arrange 4-5 strips of turkey bacon side by side. At one end, weave a single slice of turkey bacon perpendicular to the others, alternating over and under each strip. Repeat with 3-4 more slices to complete the weave.
- Take 2 ounces of ground beef and shape it into a patty, placing it in the center of the bacon weave. Make a small indentation in the patty and spoon a generous amount of the jalapeño cheese mixture into it. Cover the stuffing with another 1-2 ounces of ground beef and wrap the bacon ends over the top. Gently flip the burger and sprinkle with salt, pepper, and garlic powder. Repeat the weaving and burger assembly for the remaining patties, then refrigerate for at least one hour, or up to four hours for best results.
- Prepare your smoker to 275°F using a two-zone cooking method. Position the burgers on the cooler side of the smoker and cook for 1.5 hours or until the internal temperature reaches 165°F. As they near completion, place 1-2 slices of cheese on each burger to melt. Once finished, remove the burgers and allow them to rest for 10 minutes.
- While the burgers are resting, toast your burger buns. Finally, assemble the burgers with the toasted buns, mayonnaise, burger, BBQ sauce, and any additional toppings you like. Serve and enjoy!
