Ingredients

  • 1 lb (454 g). Beef Bacon (cooked until crispy)
  • 2 cup (480 ml) s Froz en Potatoes or Hash browns
  • 12 large Eggs
  • 1 cup (240 ml) Milk or Cream
  • 1 teaspoon (5 ml) Salt
  • 1 teaspoon (5 ml) Pepper
  • 4 ounce (113 g) s Diced Green Chilies (from a can)
  • 4 ounce (113 g) s Cream Cheese (softened and cut into small pieces)
  • 2 cup (480 ml) s Sharp Cheddar Cheese


Instructions

  1. Cook the beef bacon until it becomes crunchy. You can achieve a crispy texture by frying it in a pan or baking it in the oven at 400 degrees Fahrenheit for approximately 20-24 minutes. Once done, place it on a towel-lined plate, press gently with a towel to remove excess grease, and crumble into small bits.
  2. Set your oven to preheat at 350 degrees Fahrenheit. Use a non-stick cooking spray to coat a 9 x 13 baking dish. Evenly distribute the frozen potatoes or hash browns at the base of the dish.
  3. In a mixing bowl, combine the eggs, milk, salt, and pepper, whisking them together until smooth. Incorporate the diced green chilies into the egg mixture, then pour this mixture over the layer of potatoes.
  4. Cut the cream cheese into small chunks and distribute them evenly throughout the egg mixture. This ensures the cream cheese retains its form and doesn’t fully dissolve during baking.
  5. Scatter the sharp cheddar cheese over the top. Place the dish in the oven and bake for 25-33 minutes, or until the center is fully cooked. With about 5 minutes remaining, take the dish out, sprinkle the crunchy bacon on top, and return it to the oven to finish baking.
  6. Once removed from the oven, allow the dish to rest for 10 minutes before slicing it into portions.
