Delicious breakfast quesadillas filled with crispy bacon, fluffy scrambled eggs, and gooey cheese, perfect for lazy weekend mornings.
Ingredients
- 4 large eggs
- 4 strips of bacon
- 1 cup of shredded cheddar cheese
- 2 large flour tortillas
- Salt and pepper to taste
- Butter or oil for cooking
Instructions
- Cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.
- In the same skillet, scramble the eggs, seasoning with salt and pepper to taste.
- Lay one tortilla flat and spread bacon evenly on top. Add scrambled eggs and sprinkle with cheese.
- Place the second tortilla on top to form a sandwich.
- Heat butter or oil in the skillet and cook the quesadilla for 2–3 minutes on each side until golden brown and cheese melts.
- Cut into wedges and serve warm.
Notes
For added flavor, consider adding jalapeños or sautéed vegetables. Use different types of cheese for a unique twist.
