Description

A delightful breakfast burrito filled with fluffy scrambled eggs, crispy bacon, melted cheese, and roasted potatoes, wrapped in a warm tortilla.


Ingredients

  • 2 tablespoons butter
  • 6 large eggs
  • ½ teaspoon garlic powder
  • ⅛ teaspoon cayenne pepper
  • Sea salt and black pepper, to taste
  • 4 large flour tortillas, warmed
  • 2 cups roasted or pan-fried potatoes
  • 1 cup grated cheddar cheese
  • 1 cup cooked breakfast sausage, cut into pieces
  • 5 slices bacon, cooked and sliced
  • Sour cream, for serving
  • Salsa, for serving


Instructions

  1. Melt the butter in a skillet over medium heat.
  2. Add the whisked eggs, garlic powder, cayenne, sea salt, and black pepper.
  3. Stir and cook until eggs are fully set, maintaining a creamy consistency.
  4. Lay each warmed tortilla flat on a surface.
  5. Add ½ cup scrambled eggs to the center of each tortilla.
  6. Top with ½ cup of roasted or pan-fried potatoes.
  7. Sprinkle ¼ cup of grated cheddar cheese and ¼ cup of either bacon or breakfast sausage.
  8. Roll the tortilla tightly into a burrito shape.
  9. Cook each burrito in a skillet with a small amount of butter or oil until golden on both sides, or bake at 350°F (175°C) for 10 minutes.
  10. Serve with sour cream and salsa on the side.
