Ingredients

  • 48 froz en tater tots, thawed
  • 3 beef bacon slices
  • 1 lb (454 g) lean ground beef
  • 2 tablespoon (30 ml) s ketchup
  • 1 tablespoon (15 ml) Worcestershire sauce
  • 1 tablespoon (15 ml) Montreal steak seasoning
  • 1 cup (240 ml) shredded Monterey jack and cheddar blend
  • Chopped parsley for garnish, if desired


Instructions

  1. Set your oven to 400 degrees F (200 degrees C) and position a rack in the center. Liberally coat a 24-cup mini muffin tin with nonstick spray. Put a pair of tater tots into every muffin slot.
  2. Cook them in the oven until they are heated through and slightly crisp, roughly 15 minutes. Use the back of a round tablespoon or a similar tool to press the tater tots into each muffin cup, forming a small bowl. Keep the oven running.
  3. In the meantime, lay bacon slices in a cold pan, ideally cast iron. Heat the pan over medium-high heat, cooking the bacon until the underside is browned and crispy, around 3 to 4 minutes. Turn the bacon over and continue cooking until the other side is browned, approximately 2 more minutes. Move the bacon to a plate lined with paper towels to remove excess grease. Chop the bacon into small bits.
  4. Pour out all but 1/2 tablespoon of bacon grease from the pan and return it to medium-high heat. Add the ground beef, letting it cook undisturbed until the bottom is browned. Break the meat into smaller pieces using a wooden spoon, cooking until it is just slightly pink, about 6 to 7 minutes. It will finish cooking in the oven. Take the pan off the heat and carefully remove any extra liquid and fat.
  5. Combine ketchup, Worcestershire sauce, and Montreal steak seasoning with the ground beef. Let this mixture cool for about 10 minutes, then mix in the chopped bacon and shredded cheese. Distribute the beef mixture evenly into the tater tot bowls.
  6. Place them back into the oven, baking until the cheese is melted and the tops are lightly browned, around 10 minutes.
  7. Let them cool slightly in the muffin tin before moving them to a serving dish, and decorate with chopped parsley if you wish.
