Ingredients
- 454 g ground beef
- 4 strips beef bacon
- 2 medium carrots, peeled and diced
- 2 medium celery, diced
- 1 small onion, diced
- 946 ml chicken broth
- 2 large russet potatoes, peeled and diced
- 45 ml vegetable oil
- 30 g all-purpose flour
- 355 ml milk
- 200 g shredded Cheddar cheese, plus more for garnish
- 1 tsp (5 ml) dried basil
- 1 tsp (5 ml) dried parsley
- salt and freshly ground black pepper to taste
Instructions
- Start by assembling all the necessary items.
- Warm a large pan over medium-high heat. Add the ground beef, cooking and stirring until thoroughly browned and crumbly, about 5 to 7 minutes. Remove from the pan, get rid of the excess grease, and set aside.
- At the same time, place the strips of beef bacon in a 3-quart pot, cooking over medium-high heat and turning occasionally until they are evenly crisp, roughly 10 minutes. Use a slotted spoon to transfer the bacon onto paper towels for draining. Keep the bacon fat in the pot.
- In the retained bacon fat, sauté the carrots, celery, and onion until they become soft, approximately 10 minutes. Add chicken broth, diced potatoes, and the cooked ground beef. Increase the heat until boiling, then lower the heat, cover the pot, and let it simmer until the potatoes are tender, about 10 to 12 minutes.
- While waiting, clean the skillet used previously for the beef. Heat vegetable oil in the skillet and whisk in the flour. Stir continuously until the mixture becomes bubbly, about 3 to 5 minutes. Gradually whisk the milk into the flour mixture until everything is well-blended and smooth.
- Introduce the milk concoction into the soup, whisking together thoroughly. Bring to a boil and then let it simmer for around 2 minutes. Mix in the shredded Cheddar cheese until fully melted. Add the dried basil, parsley, salt, and pepper for seasoning.
- Take the soup off the heat. Serve it into bowls and top with the crispy bacon and extra shredded Cheddar cheese.

- For a healthier option, use lean ground beef or turkey instead of regular ground beef.
- To enhance flavor, try smoked beef bacon or a sprinkle of smoked paprika.
