Description

A rich and creamy comfort meal that warms the heart during chilly autumn evenings.


Ingredients

  • 8-10 slices bacon, cooked and chopped
  • 1 tablespoon butter or olive oil
  • 1 large onion, diced
  • 2 large carrots, peeled and sliced
  • 4 cups chicken broth
  • 1-2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder (or 4 cloves minced garlic)
  • ¼ teaspoon dried thyme
  • ½-1 teaspoon red chili flakes (optional)
  • 16 ounces gnocchi
  • 2 cups heavy cream or half-and-half
  • 2 cups shredded cheddar cheese (medium or sharp)


Instructions

  1. Cook the bacon until crispy and set aside.
  2. In a large pot, heat the butter or olive oil over medium heat.
  3. Add the diced onions and sliced carrots, sautéing until tender.
  4. Pour in the chicken broth and bring to a simmer.
  5. Stir in the heavy cream, salt, pepper, garlic powder, thyme, and red chili flakes.
  6. Add the gnocchi and cook for about 2 minutes or until tender.
  7. Stir in the crispy bacon and adjust seasoning to taste.
  8. Serve hot.

Notes

For an extra rich finish, consider using half-and-half instead of straight heavy cream. Pay attention to the cheese temperature for smooth melting.
