Ingredients
- 8-10 slices bacon, cooked and chopped
- 1 tablespoon butter or olive oil
- 1 large onion, diced
- 2 large carrots, peeled and sliced
- 4 cups chicken broth
- 1-2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder (or 4 cloves minced garlic)
- ¼ teaspoon dried thyme
- ½-1 teaspoon red chili flakes (optional)
- 16 ounces gnocchi
- 2 cups heavy cream or half-and-half
- 2 cups shredded cheddar cheese (medium or sharp)
Instructions
- Cook the bacon until crispy and set aside.
- In a large pot, heat the butter or olive oil over medium heat.
- Add the diced onions and sliced carrots, sautéing until tender.
- Pour in the chicken broth and bring to a simmer.
- Stir in the heavy cream, salt, pepper, garlic powder, thyme, and red chili flakes.
- Add the gnocchi and cook for about 2 minutes or until tender.
- Stir in the crispy bacon and adjust seasoning to taste.
- Serve hot.
Notes
For an extra rich finish, consider using half-and-half instead of straight heavy cream. Pay attention to the cheese temperature for smooth melting.
