Description

A rich and creamy comfort soup featuring crispy bacon and tender gnocchi.


Ingredients

  • 810 slices bacon, cooked and chopped
  • 1 tbsp butter or olive oil
  • 1 large onion, diced
  • 2 large carrots, peeled and sliced
  • 4 cups chicken broth
  • 1-2 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder (or 4 cloves minced garlic)
  • ¼ tsp dried thyme
  • ½-1 tsp red chili flakes (optional)
  • 16 oz gnocchi
  • 2 cups heavy cream or half-and-half
  • 2 cups shredded cheddar cheese (medium or sharp)


Instructions

  1. Cook bacon until crispy, then chop and set aside.
  2. In a large pot, heat butter or oil over medium heat.
  3. Sauté onions and carrots in the pot until tender, about 5–7 minutes.
  4. Add chicken broth and bring to a simmer.
  5. Stir in heavy cream, salt, black pepper, garlic powder, thyme, and chili flakes, stirring continuously.
  6. Add gnocchi, cooking for 2 minutes or until soft.
  7. Stir in the chopped bacon and adjust seasoning as needed.
  8. Serve hot and enjoy the comforting flavors.

Notes

For a lighter version, substitute half-and-half for heavy cream. Garnish with fresh herbs for a burst of flavor.
