Ingredients
- 2 boneless, skinless chicken breasts
- 4 slices beef bacon
- 1 cup barbecue sauce (240 ml)
- 1 cup shredded cheddar cheese (100 g)
- 1 teaspoon garlic powder (5 g)
- 1 teaspoon onion powder (5 g)
- 1 teaspoon smoked paprika (5 g)
- Salt, to taste
- Black pepper, to taste
- 2 tablespoon s olive oil (30 ml)
- 2 tablespoon s chopped fresh parsley (optional ) (8 g)
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, mix garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Rub chicken breasts with olive oil and evenly coat with the spice mixture.
- Cook beef bacon in a pan over medium heat until crispy, then set aside to cool.
- Chop the cooked bacon into small pieces.
- Cut a pocket in the side of each chicken breast, being careful not to cut all the way through.
- Stuff each pocket with chopped bacon and shredded cheddar cheese.
- Secure the openings with toothpicks to prevent filling from falling out.
- Brush each stuffed chicken breast with barbecue sauce.
- Place the stuffed chicken on the grill.
- Grill for 6-8 minutes per side, or until the chicken is fully cooked and has an internal temperature of 165°F (75°C).
- During the last few minutes of grilling, brush additional barbecue sauce over the chicken.
- Remove from grill and let rest for a few minutes.
- Optionally, sprinkle chopped fresh parsley over the chicken before serving.
