Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 slices beef bacon
  • 1 cup barbecue sauce (240 ml)
  • 1 cup shredded cheddar cheese (100 g)
  • 1 teaspoon garlic powder (5 g)
  • 1 teaspoon onion powder (5 g)
  • 1 teaspoon smoked paprika (5 g)
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoon s olive oil (30 ml)
  • 2 tablespoon s chopped fresh parsley (optional ) (8 g)


Instructions

  1. Preheat grill to medium-high heat.
  2. In a small bowl, mix garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Rub chicken breasts with olive oil and evenly coat with the spice mixture.
  4. Cook beef bacon in a pan over medium heat until crispy, then set aside to cool.
  5. Chop the cooked bacon into small pieces.
  6. Cut a pocket in the side of each chicken breast, being careful not to cut all the way through.
  7. Stuff each pocket with chopped bacon and shredded cheddar cheese.
  8. Secure the openings with toothpicks to prevent filling from falling out.
  9. Brush each stuffed chicken breast with barbecue sauce.
  10. Place the stuffed chicken on the grill.
  11. Grill for 6-8 minutes per side, or until the chicken is fully cooked and has an internal temperature of 165°F (75°C).
  12. During the last few minutes of grilling, brush additional barbecue sauce over the chicken.
  13. Remove from grill and let rest for a few minutes.
  14. Optionally, sprinkle chopped fresh parsley over the chicken before serving.
