Description

A delightful breakfast option combining creamy avocado, vibrant pesto, and eggs on toasted whole grain bread.


Ingredients

  • 2 slices of whole grain bread
  • 1 ripe avocado
  • 2 tablespoons pesto
  • 2 eggs
  • Salt and pepper to taste
  • Red pepper flakes (optional)
  • Olive oil (for drizzling)


Instructions

  1. Toast the slices of bread until golden brown.
  2. In a bowl, mash the avocado with salt and pepper until smooth.
  3. Spread the pesto evenly on each slice of toasted bread.
  4. Add a generous layer of mashed avocado on top of the pesto.
  5. In a skillet, cook the eggs to your preferred style (poached, fried, etc.).
