A delightful breakfast option combining creamy avocado, vibrant pesto, and eggs on toasted whole grain bread.
Ingredients
- 2 slices of whole grain bread
- 1 ripe avocado
- 2 tablespoons pesto
- 2 eggs
- Salt and pepper to taste
- Red pepper flakes (optional)
- Olive oil (for drizzling)
Instructions
- Toast the slices of bread until golden brown.
- In a bowl, mash the avocado with salt and pepper until smooth.
- Spread the pesto evenly on each slice of toasted bread.
- Add a generous layer of mashed avocado on top of the pesto.
- In a skillet, cook the eggs to your preferred style (poached, fried, etc.).
- Place the cooked eggs on top of the avocado.
- Drizzle with olive oil and sprinkle with red pepper flakes if desired.
- Serve immediately.
Notes
