Description

A comforting and flavorful soup made with caramelized onions and umami-rich dashi broth.

Ingredients

  • 2 large onions, thinly sliced
  • 4 cups dashi broth
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste
  • Salt to taste
  • Chopped green onions for garnish

Instructions

  1. Add the sliced onions to a pot over medium heat and sauté until they are soft and caramelized.
  2. Pour in the dashi broth and bring to a simmer.
  3. Stir in the soy sauce and miso paste, mixing until well combined.
  4. Season with salt to taste.
  5. Serve hot, garnished with chopped green onions.

Notes

When preparing, taste the broth during cooking to adjust flavors. Patience during caramelization is key for depth of flavor.
