Ingredients
- 6 fresh Anaheim chili peppers (6 peppers)
- 1 (226 g) package beef cheese, cut into 3/4-inch (2 cm) thick strips
- 2 large eggs, separated
- 1 teaspoon (5 ml) baking powder
- 180 g all-purpose flour
- 240 ml vegetable oil for frying
Instructions
- Collect all necessary items.
- Switch on the broiler and adjust the oven rack to be approximately 6 inches from the heat source. Cover a baking tray with foil.
- Arrange the chili peppers on the tray and broil them until their skins are charred and blistered, which takes about 10 minutes. Use tongs to turn the peppers frequently to ensure even charring. Transfer the charred peppers into a bowl and cover tightly with plastic wrap. Let them steam and cool for around 15 minutes.
- Peel the skins off the peppers and make a slit along the side of each one to remove the seeds and core.
- Wash the inside and outside of the peppers, then dry them with paper towels. Fill the peppers with the cheese strips.
- In a bowl, whisk the egg yolks with the baking powder until they are mixed well.
- In another bowl, use an electric mixer to whip the egg whites until they form stiff peaks.
- Carefully combine the whipped egg whites with the yolk mixture. Put the flour in a shallow bowl.
- Heat vegetable oil in a pan over medium heat. Coat each cheese-filled pepper with flour, shake off the excess, and then dip it into the egg mixture to cover both sides. Carefully place the coated peppers into the hot oil. Fry them until they are a light golden color and the cheese is melted, approximately 5 minutes per side.
- Serve the dish and savor it!
Notes
- Thoroughly dry both the inside and outside of the peppers after washing to prevent oil splatters when frying.
- When filling the peppers with cheese strips, leave enough space for the cheese to melt without overflowing.
- Ensure the oil is hot enough before frying the coated peppers to achieve a crispy coating.
