Ingredients
- 2 cups cake flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
- 6 large eggs, separated
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3/4 cup water
- 2 ripe mangoes, peeled and diced
- 1 cup heavy cream
- 2 tablespoons powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and grease two 8-inch round cake pans.
- Sift together cake flour, baking powder, and salt in a bowl.
- Whisk the egg yolks, sugar, vegetable oil, vanilla extract, and water in another bowl until smooth. Gradually add the flour mixture.
- Beat egg whites until stiff peaks form, then fold gently into the batter.
- Divide the batter between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
- Let the cakes cool completely, then layer with diced mango between the cake layers.
- Beat the heavy cream with powdered sugar until peaks form for the whipped cream.
- Frost the cake with the whipped cream and top with additional mango slices.
- Chill before serving.
