Description

Ingredients

  • 2 cups cake flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 6 large eggs, separated
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup water
  • 2 ripe mangoes, peeled and diced
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar


Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 8-inch round cake pans.
  2. Sift together cake flour, baking powder, and salt in a bowl.
  3. Whisk the egg yolks, sugar, vegetable oil, vanilla extract, and water in another bowl until smooth. Gradually add the flour mixture.
  4. Beat egg whites until stiff peaks form, then fold gently into the batter.
  5. Divide the batter between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  6. Let the cakes cool completely, then layer with diced mango between the cake layers.
  7. Beat the heavy cream with powdered sugar until peaks form for the whipped cream.
  8. Frost the cake with the whipped cream and top with additional mango slices.
  9. Chill before serving.
