Ingredients
- 1 cup rolled oats
- 1 cup whole wheat flour
- 1/2 cup brown sugar
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup milk (or dairy-free alternative)
- 1/4 cup vegetable oil (or melted coconut oil)
- 1 large egg
- 1 cup grated apple (about 1 medium apple)
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a large bowl, mix together rolled oats, whole wheat flour, brown sugar, baking powder, cinnamon, and salt.
- In another bowl, whisk the milk, vegetable oil, egg, grated apple, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing.
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool in the tin for a few minutes before transferring them to a wire rack for further cooling.

Use fresh ingredients and choose apples suitable for baking like Granny Smith or Fuji. Store muffins in an airtight container to keep them fresh.
