Description

Delicious and nutritious apple cinnamon muffins made with Greek yogurt for a moist and fluffy texture.


Ingredients

  • 1 cup Greek yogurt
  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 large egg
  • 1/2 cup unsweetened applesauce
  • 1 cup diced apples
  • 2 tbsp honey or maple syrup (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix Greek yogurt, applesauce, egg, and honey until well combined.
  3. In another bowl, combine flour, oats, brown sugar, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the diced apples.
  6. Fill muffin cups about 2/3 full with the batter.
  7. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.

Notes

For best flavor, use fresh, crisp apples like Granny Smith or Honeycrisp. You can also add chopped nuts for extra texture.
