Delightful apple cinnamon breakfast quesadillas that blend the flavors of apple pie with the convenience of a quesadilla.
Ingredients
- 2 medium apples, cored and thinly sliced
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 2 tablespoons brown sugar
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup cream cheese, softened
- 2 tablespoons unsalted butter
Instructions
- In a mixing bowl, toss the thinly sliced apples with lemon juice, cinnamon, and brown sugar. Let this mixture sit for 10 minutes.
- Spread cream cheese on one side of each tortilla.
- Layer apples and cheddar on half of each tortilla, then fold in half.
- Melt butter in a skillet over medium heat. Cook the quesadillas for 2-3 minutes per side until golden brown.
- Remove from the skillet, slice into wedges, and serve warm.
Notes
Experiment with different types of cheese or add nuts for additional crunch. Serve with fruit salad or yogurt for a light side.
