Description

Delightful apple cinnamon breakfast quesadillas that blend the flavors of apple pie with the convenience of a quesadilla.


Ingredients

  • 2 medium apples, cored and thinly sliced
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 2 tablespoons brown sugar
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup cream cheese, softened
  • 2 tablespoons unsalted butter


Instructions

  1. In a mixing bowl, toss the thinly sliced apples with lemon juice, cinnamon, and brown sugar. Let this mixture sit for 10 minutes.
  2. Spread cream cheese on one side of each tortilla.
  3. Layer apples and cheddar on half of each tortilla, then fold in half.
  4. Melt butter in a skillet over medium heat. Cook the quesadillas for 2-3 minutes per side until golden brown.
  5. Remove from the skillet, slice into wedges, and serve warm.

Notes

Experiment with different types of cheese or add nuts for additional crunch. Serve with fruit salad or yogurt for a light side.
