Deliciously spiced apple fritter bread that captures the essence of classic apple fritters in a moist, tender loaf.
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 2 apples, peeled, cored, and chopped
- 1 tablespoon brown sugar (for sprinkling)
- 1 teaspoon cinnamon (for sprinkling)
- 1/2 cup powdered sugar (for glaze)
- 1 tablespoon milk (for glaze)
- 1/2 teaspoon vanilla extract (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon until well blended.
- In another bowl, whisk together the eggs, vegetable oil, vanilla extract, and milk until fully combined.
- Gradually stir the wet ingredients into the dry mix until everything combines into a cohesive batter. Take care not to over-mix.
- Gently fold in the chopped apples.
- Pour half of the batter into the prepared loaf pan. In a small bowl, mix the brown sugar and cinnamon together for the topping and sprinkle half of this mixture over the batter.
- Add the remaining batter on top and sprinkle the rest of the cinnamon-sugar mixture over it. Use a knife or skewer to swirl everything together.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- While the bread cools, mix the powdered sugar, milk, and additional vanilla extract in a small bowl to create a smooth glaze.
- Drizzle the glaze over the cooled bread, slice, and serve.
Notes
For best results, use a mix of tart and sweet apples and store the bread tightly wrapped at room temperature. Can also freeze for longer storage.
