Description

Deliciously spiced apple fritter bread that captures the essence of classic apple fritters in a moist, tender loaf.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 apples, peeled, cored, and chopped
  • 1 tablespoon brown sugar (for sprinkling)
  • 1 teaspoon cinnamon (for sprinkling)
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon until well blended.
  3. In another bowl, whisk together the eggs, vegetable oil, vanilla extract, and milk until fully combined.
  4. Gradually stir the wet ingredients into the dry mix until everything combines into a cohesive batter. Take care not to over-mix.
  5. Gently fold in the chopped apples.
  6. Pour half of the batter into the prepared loaf pan. In a small bowl, mix the brown sugar and cinnamon together for the topping and sprinkle half of this mixture over the batter.
  7. Add the remaining batter on top and sprinkle the rest of the cinnamon-sugar mixture over it. Use a knife or skewer to swirl everything together.
  8. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  9. While the bread cools, mix the powdered sugar, milk, and additional vanilla extract in a small bowl to create a smooth glaze.
  10. Drizzle the glaze over the cooled bread, slice, and serve.

Notes

For best results, use a mix of tart and sweet apples and store the bread tightly wrapped at room temperature. Can also freeze for longer storage.
