A delightful bread that combines the cozy charm of Amish recipes with sweet and spiced flavors of autumn, featuring juicy apples and a rich buttery batter.
Ingredients
- 1/2 cup (113g) unsalted butter, softened
- 2/3 cup (133g) granulated sugar
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 3/4 tsp baking powder
- 1/2 cup (120ml) milk
- 2 medium apples, peeled, cored & diced (a mix of tart and sweet)
- 1/3 cup (67g) brown sugar
- 1 tsp ground cinnamon
- 1/2 cup (60g) powdered sugar
- 1–2 tbsp milk (for glaze)
- 1/4 tsp vanilla extract (for glaze)
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- In a mixing bowl, combine the diced apples with brown sugar and cinnamon. Toss until the apples are evenly coated and set the mixture aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs, adding one at a time, then mix in the vanilla extract.
- In another bowl, whisk together the flour and baking powder. Gradually add the dry mixture to the butter and sugar mixture, alternating with the milk. Mix just until combined.
- Pour half of the batter into the prepared loaf pan and layer with half of the apple mixture. Repeat with the remaining batter and apples, swirling lightly with a knife.
- Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- For the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth, then drizzle over the cooled bread.
Notes
For best results, use a mix of tart and sweet apples. Serve slightly warm for enhanced flavors.
