Ingredients
- 1 tbsp Vegetable Oil (15 ml)
- 1 Yellow Onion, finely diced
- 3 cloves Garlic, finely minced
- 3 cans Green Chilis
- 2 lbs Chicken Breast, raw, diced into 1/2 inch cubes (900 g)
- 5 tsp Adobo Seasoning (7.5 g)
- 2 Limes
- 4 cans White Beans, 15.5 oz (439 g) cannellini or great northern beans
- 1 cup (240 ml) Frozen Corn Kernels
- 5 cups Chicken Broth (830 ml)
- 5 tsp Sea Salt (7.5 g)
- 1 tsp Black Pepper (5 g)
- 3 tsp Cumin (6 g)
- 1 tsp Oregano (1 g)
- 1/4 tsp (1 ml) Red Pepper Flakes
- 8 oz Low Fat Cream Cheese, cut into cubes (225 g)
- 1 cup Coconut Cream (240 ml)
- Blue Corn Tortilla Chips, optional but recommended
- Avocado, optional but recommended
Instructions
- Pour vegetable oil into a large pot or Dutch oven and warm it over medium heat.
- Toss in the diced onion and minced garlic, allowing them to cook for five minutes before introducing the green chilis.
- Once the onion and garlic begin to brown, add the cubed chicken seasoned with adobo seasoning, along with the juice of one lime. Stir constantly for five minutes.
- Ensure the chicken cubes are lightly seared on all sides, then incorporate the chicken broth, white beans, corn, sea salt, black pepper, cumin, oregano, and red pepper flakes. Bring the mixture to a boil.
- Allow it to boil for approximately three minutes, then reduce the heat to a simmer, which is typically closer to the low setting on your stove. You should see occasional bubbles during this stage.
- Simmer the mixture for 45 minutes, then turn off the heat. Add the cream cheese cubes and stir until well combined. Follow with the coconut cream and stir again.
- Serve in a bowl, squeeze in some lime juice, and garnish with avocado slices and crushed blue corn tortilla chips. Enjoy!
