Ingredients

  • 1 (454 g) package whole white button mushrooms
  • 2 scallions
  • 4 ounces (113 g) cream cheese, softened
  • 60 ml finely shredded sharp Cheddar cheese
  • 1/4 teaspoon (1 ml) ground paprika
  • 1 pinch salt

Instructions

  1. Use a moist cloth to gently wipe the mushrooms clean. Remove and discard the stems.
  2. Finely chop the scallions, keeping the white and green parts separate.
  3. Set the air fryer to a temperature of 360°F (182°C) and let it preheat.
  4. In a small bowl, combine the softened cream cheese, shredded Cheddar cheese, chopped scallion whites, paprika, and a pinch of salt. Use a small spoon to carefully pack this mixture into the mushroom caps.
  5. Lightly coat the air fryer basket with cooking spray, then arrange the stuffed mushrooms inside without overcrowding; you might need to do this in several rounds.
  6. Cook the mushrooms in the air fryer until the stuffing is slightly browned, which should take around 8 minutes. Move them to a serving dish.
