- 1 egg
- 1 tablespoon (15 ml) olive oil (15 milliliters)
Instructions
- Preheat the air fryer to 375°F (190°C).
- Place shredded zucchini in a clean kitchen towel and squeeze out excess moisture.
- In a large bowl, combine zucchini, shredded carrots, chopped onions, and chopped bell peppers.
- In a separate bowl, mix all-purpose flour, cornmeal, baking powder, garlic powder, onion powder, paprika, salt, and black pepper.
- Add the dry ingredients to the vegetable mixture and stir until combined.
- Beat the egg and olive oil together in a small bowl.
- Pour the egg mixture over the vegetable and flour mixture, and mix until well combined.
- Form the mixture into small patties or fritters.
- Lightly grease the air fryer basket with a small amount of olive oil.
