  • 1/2 cup (120 ml) all-purpose flour (60 grams)
  • 1/4 cup (60 ml) cornmeal (40 grams)
  • 1/4 teaspoon (1 ml) baking powder (1 gram)
  • 1/4 teaspoon (1 ml) garlic powder (1 gram)
  • 1/4 teaspoon (1 ml) onion powder (1 gram)
  • 1/4 teaspoon (1 ml) paprika (1 gram)
  • 1/4 teaspoon (1 ml) salt (1.5 grams)
  • 1/4 teaspoon (1 ml) black pepper (1 gram)
  • 1 egg
  • 1 tablespoon (15 ml) olive oil (15 milliliters)


Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Place shredded zucchini in a clean kitchen towel and squeeze out excess moisture.
  3. In a large bowl, combine zucchini, shredded carrots, chopped onions, and chopped bell peppers.
  4. In a separate bowl, mix all-purpose flour, cornmeal, baking powder, garlic powder, onion powder, paprika, salt, and black pepper.
  5. Add the dry ingredients to the vegetable mixture and stir until combined.
  6. Beat the egg and olive oil together in a small bowl.
  7. Pour the egg mixture over the vegetable and flour mixture, and mix until well combined.
