Ingredients

  • 2 chicken breasts (500g) boneless, skinless. Cut into even bite-size strips, approximately 2.5 cm thick and 5-7.5 cm in length. Can also use chicken tenderloins.
  • 1 tablespoon (15ml) vegetable oil
  • 6 slices beef bacon (or regular thin-cut bacon)
  • 1/2 tsp (2.5g) salt and pepper, or to taste
  • 1/4 tsp (1.25g) smoked paprika
  • 1/2 tsp (2.5g) garlic powder
  • 1/4 tsp (1.25g) onion powder
  • 1 TBS (15ml) chopped Parsley, optional for garnishing


Instructions

  1. Place the chicken strips in a medium-sized bowl, drizzle with oil, and sprinkle with spices. Massage the mixture into the chicken until everything is well combined. Adjust seasoning as desired. Cover the bowl and let it rest in the refrigerator for 20-30 minutes.
  2. Set the air fryer to heat up to 400F/200C. If there’s no preheat feature, simply run it empty for about 3 minutes to warm up.
  3. Take each chicken strip and wrap it with a half slice of bacon. If needed, extend the bacon to cover the chicken entirely. Use toothpicks to secure the bacon wrap if it doesn’t stay in place.
  4. Arrange the bacon-covered chicken pieces in the air fryer basket or on the tray, ensuring they have some space and aren’t overlapping. For smaller air fryers, you may need to cook them in batches of 6-8 pieces.
  5. Cook the chicken in the air fryer at 400F/200C for about 10-12 minutes, turning them halfway through. The bacon should be thoroughly cooked, with a nice golden-brown and crispy finish. If uncertain about doneness, check with a meat thermometer until the chicken’s internal temperature reaches 165F/73C, or cook to your preferred level of doneness.

Notes

  • Marinate chicken strips in the spice mixture for up to 24 hours in the refrigerator for enhanced flavor.
  • Wrap bacon tightly around the chicken to prevent unraveling during cooking.
  • Sprinkle grated parmesan cheese on the bacon-wrapped chicken for a cheesy twist. Serve with honey mustard or ranch dressing for dipping.
