Ingredients
- 1 medium butternut squash (about 2 lbs)
- 2 tbsp olive oil
- 2 tbsp brown sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cinnamon
Instructions
- Preheat your oven to 400°F (200°C).
- Peeled and cube butternut squash into 1-inch pieces.
- Toss cubed squash in a large bowl with olive oil, brown sugar, salt, pepper, and cinnamon until well coated.
- Spread the squash evenly across a baking sheet without overcrowding.
- Roast in the oven for 25-30 minutes, or until tender and caramelized.
- Stir the squash halfway through cooking for even browning.
