Ingredients
- 2 large chicken breasts (500g) or 5-6 boneless chicken thighs
- 2 tablespoons (30ml) flour
- 1 tsp (5 ml) EACH paprika, garlic powder, onion powder
- 1/2 tsp (3 ml) EACH ground cumin, salt, pepper, chipotle chile pepper
- 2 tablespoons (30ml) unsalted butter
- 2 tablespoons (30ml) vegetable oil
- 1/2 cup (120ml) packed light brown sugar
- 1/4 cup (60ml) soy sauce
- 1/4 cup (60ml) chicken broth
- 1 tablespoon (15ml) lemon juice
- 1 teaspoon (5 ml) Dijon mustard
- 1/2 teaspoon (3 ml) cornstarch
- 1/2 tsp (3 ml) EACH dried parsley, dried thyme, dried oregano
- Dash red pepper flakes

- Halve the chicken breasts horizontally to form four pieces. Place them under plastic wrap and flatten them to an even thickness. Ensure they are dry.
- Combine the flour with all the chicken spices in a shallow bowl. Set aside one tablespoon for later use in the sauce. Coat each chicken piece in the remaining flour mixture, shake off the excess, and place on a dry surface.
- In a large pan, heat the butter and oil over medium-high heat. Once hot, add the chicken and cook each side for 4-5 minutes until they turn golden brown and are thoroughly cooked. Move the chicken to a plate, leaving the skillet as is.
- In a separate bowl, mix the chicken broth with cornstarch and add it to the skillet. Then, incorporate all the sauce ingredients, including the reserved flour mixture. Let the sauce simmer, scraping up any browned bits from the pan, until it thickens to your liking. Stir frequently and taste the sauce, adding more lemon juice if you prefer it tangier or less sweet.
- Return the chicken to the skillet and drizzle some sauce over it. Heat gently on low so the chicken absorbs some of the sauce. Optionally, sprinkle with fresh parsley and serve with mashed potatoes, polenta, rice, or cauliflower rice. If the chicken is sweeter than desired, squeeze fresh lemon juice over it before serving.

- Add more chipotle chile pepper or a dash of hot sauce for a spicier flavor.
